We carefully join solid hardwood using a professional-grade, waterproof adhesive that is FDA-approved for indirect food contact (an extra step many makers skip because it is 3 times the cost of cheaper glues). Thanks to the precision of our joinery and the unusually large solid wood blocks we use; your knife almost exclusively contacts wood when you chop. We did the math, and the total amount of glue your knife could encounter (on both faces of the board) is roughly equivalent to the size of a single grain of table salt.
We finish every board by hand with food-safe oil and Board Butter—because real craftsmanship means choosing quality, proven, and safe materials and doing things the right way, not the fast way.

All boards are made to order and take 2-3 weeks to fabricate.
Not sure why but the amount of work to get the board saturated with mineral oil took many many days and applications. I feel like this is putting me to work doing something that you could have done.
