Occasionally we have a pretty board that for one reason or another, we can't sell at the premium price. This beautiful Big Block Board has what are called Wind Checks. They are characteristic because the checking is perfectly perpendicular to the annulary rays in the wood grain. Those checks exist at a microscopic level throughout all hard maple, but sometimes become visible—typically in colder, dryer months (normally December-February). As often as not, they will disappear, especially if the board gets a heavy coating of oil and board butter. We typically don't see windchecks in our shop. They happen because the customer doesn't oil the board enough, and as mentioned above, typically disappear with oiling. Since these did not disappear, we feel we should sell this one at a discount. To be clear - these are not cracks and will not grow. We feel completely comfortable selling this board and would use it in our own kitchen without hesitation. (We have a whole shelf in our shop of boards we can't sell due to small cracks in the wood - this board does not fit in that category.)
