They are characteristic because the checking is perfectly perpendicular to the annularly rays in the wood grain. Those checks exist at a microscopic level throughout most hard wood, but sometimes become visible—typically in colder, dryer months (normally December-February). As often as not, they will disappear, especially if the board gets a heavy coating of oil and board butter. However, we don't think these checks will disappear, but they will not affect the integrity of the board. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eWalnut tends to be our favorite of the Big 3 (Maple, Cherry and Walnut) because of its ease on a knifes edge and how easy it is to maintain.
